Lemon Pickles

Ingredients
1 lb. Paramount Citrus lemons
¼ cup or 4 full tablespoons salt
Water
Directions
• Wash the lemons in cold water and dry completely.
• Quarter the lemons from the top almost all the way through to the bottom, leaving about ½ inch so they'll hold together.
• Coat the inside of the lemons generously with salt and then pack lemons tightly into a sterile glass jar.
• Fill the jar with water and seal tightly.
• In a cool and dry place let rest for 4 weeks.
• Can be stored in a refrigerator for up to 6 months.
• Great to use to flavor any dish.
