Lemon Oysters On The Half Shell

Ingredients
2 shallots, finely minced
1 qt. Lemon oil
3 tbsp. tarragon, finely chopped
Salt and pepper to taste
100 oysters on the half shell
Crushed ice on which to serve oysters
Lemon wedges to garnish
Directions
Mix the shallots, lemon oil, tarragon, and salt and pepper. Allow flavors to marry for at least two hours. Place in a squirt bottle with a large enough opening that the shallots and tarragon can pass through. Place the oysters in the shells on ice. Drizzle the oil over the top of each and garnish with lemon wedges.
