Lemon Okra with Beef

Ingredients
Juice from 2 Paramount Citrus lemons
1 cup garbanzo beans
1 lb. okra, cleaned and trimmed
1 lb. lean beef, cut into 1 inch chunks
2 cloves garlic
1 tablespoon tomato paste
¼ cup olive oil
1 cup water
½ onion, chopped
1 teaspoon black pepper
2 teaspoons salt
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a medium pot, boil beef chunks with 1 cup water for 20 minutes.
• Drain beef and reserve the beef stock.
• In a medium pot, heat olive oil and sauté onions with garlic until soft.
• Add tomato paste and beef and sauté 8-10 more minutes.
• Add okra, garbanzo beans, salt and pepper.
• Add reserved beef stock.
• Over medium heat, cook covered for 20 minutes.
• Just 2 minutes before removing from heat pour the lemon juice, stir and cook until lemon juice is heated through.
• Serve immediately.
