Lemon Marinated Haloumi Cheese With Grilled Lemon

Ingredients
Juice from 2 Paramount Citrus lemons
1 Paramount Citrus lemon, sliced fine
6 tablespoons extra virgin olive oil
3 cloves garlic, minced
2 tablespoons fresh mint, chopped
Salt to taste
½ lb. Haloumi cheese, cut diagonally into ½ inch triangles
4 slices Ciabatta bread
Olive oil for brushing bread
3 tomatoes, sliced
½ lb. arugula leaves
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• Slice a lemon; set aside.
• In a medium bowl, whisk together fresh lemon juice, olive oil, garlic, fresh mint and salt to taste.
• Toss Haloumi cheese, lemon slices with lemon dressing.
• Brush bread slices with olive oil.
• Grill bread, cheese and lemon slices separately on a grill rack turning each side once, until the bread slices are golden, and cheese and lemon are tender and grilled.
• On a large serving plate, place bread slices first. Then place arugula leaves on each bread slices, place tomato slices on top of arugula leaves, then grilled cheese slices and finally lemon wedges.
• Garnish with a rocket leave on top.
• Pour the remaining dressing over them and serve immediately.
