Lemon Lentil Soup

Ingredients
juice from 3 Paramount Citrus lemons
1 Paramount Citrus lemon, cut into wedges
2 tablespoons olive oil
5 cups water
1/2 cup low fat milk
1 cup chicken or vegetable broth
1 onion, diced
1 carrot, diced
1 potato, diced
1-1/2 cups dried lentils
4 tablespoons fresh parsley, chopped
salt and pepper to taste
Directions
• Juice three lemons with a citrus reamer or juicer; set aside.
• Add 2 tablespoons olive oil to a large pot.
• Sauté onion, carrot and potato for 2–3 minutes over medium-high heat.
• Pour water and broth into the pot.
• Add the lentils, bring to a boil; boil for 10 minutes.
• Blend mixture with a hand blender.
• Reduce the heat to low and add the milk and fresh lemon juice.
• Add the chopped parsley.
• Cook for another 20 minutes.
• Sprinkle with salt and pepper to taste.
• Serve with fresh lemon wedges.
