Lemon Iced Tea

Ingredients
peel from 3 Paramount Citrus lemons, cut into thick strips
juice from 6 Paramount Citrus lemons
1 quart cold water
4 black tea bags
2 sprigs fresh mint
1 cup granulated sugar
Directions
• Cut the peel off of three lemons in thick strips; set peel aside.
• Juice six lemons with a citrus reamer or juicer; set juice aside.
• In a saucepan, bring water to a boil and remove immediately from heat.
• Add tea bags, mint and lemon rind; allow to rest for 10 minutes.
• Discard tea bags, lemon rind and mint.
• Add fresh lemon juice and sugar; mix well.
• Refrigerate until chilled.
• Serve over ice, garnished with fresh lemon slices.
