Lemon Hazelnut Macaroons

Ingredients
Zest of 1 lemon
2 egg whites
¼ teaspoon salt
1 cup sweetened coconut flakes
2 tablespoons sugar
¼ cup hazelnuts, chopped fine
Directions
• Preheat oven to 300°F.
• Zest a lemon using a zester or a fine grater; set aside.
• In a medium bowl, beat egg whites with salt to soft peaks.
• Add salt, lemon zest and sugar, continuing to beat constantly.
• Stir in coconut and hazelnuts using a rubber spatula.
• Using a tablespoon drop the mixture on a cookie sheet.
• Bake at 300°F until the cookies are golden and crispy for about 20-25 minutes.
• Cool on wire rack.
