Lemon Goat Cheese Green Salad VegetarianQuickChef

Ingredients

2 lemons
3 c. green beans
1 clamshell baby spinach
¼ c. green onion, thinly sliced into rings
2 tbsp. parsley, coarsely chopped
2 scallions
½ c. feta cheese crumbles
Dressing:
Juice of 1 lemon
1/3 c. mayonnaise
¼ c. olive oil
1 clove garlic, crushed
1 tsp. sugar
Salt to taste
½ tsp. cracked black pepper

Directions

With a zester or microplaner, grate the zest of 1 lemon. Set aside. In a mixing bowl, whisk together all ingredients for the dressing. Set aside. Boil a pan of water. Add the green beans for 1 to 2 minutes, then place green beans immediately in the ice water bath to shock. If you prefer extremely crispy, raw green beans in your salad, skip this step. In a bowl place the spinach, green beans, scallions, and parsley. Add the lemon zest into the salad. Toss with the dressing. Top with the feta cheese crumbles.
