Lemon Garlic Potato Salad

Ingredients
zest from 1/2 Paramount Citrus lemon (optional)
juice from 2 Paramount Citrus lemons
2 lbs. potatoes, washed well
1/2 cup green onions, chopped
1/4 cup fresh mint, chopped
2 lettuce leaves, chopped very fine
1/2 cup fresh parsley, chopped
3–4 garlic cloves, minced
1/4 cup extra virgin olive oil
crushed red pepper to taste
salt and fresh ground pepper to taste
Directions
• Zest half of a lemon (optional) using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer and set aside.
• In a large pot, boil potatoes until you can pierce them with a fork.
• Drain and let potatoes cool; cut into cubes.
• In a large salad bowl, mix green onions, fresh mint, lettuce, parsley, garlic and potatoes.
• In a small bowl, whisk together olive oil, lemon juice, lemon zest (if using), red pepper, salt and fresh ground pepper to taste.
• Pour over potatoes.
• Toss well and serve.
