Lemon Egg Salad

Ingredients
Juice from 1 Paramount Citrus lemon
4 hard cooked eggs, chopped
2 tablespoons fresh parsley, chopped
4 stalks green onions, chopped
1 tablespoon sun dried tomatoes, chopped
2 tablespoons extra virgin olive oil
1 teaspoon oregano
1 teaspoon dried mint
Salt and black pepper to taste
Directions
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a medium salad bowl mix eggs, parsley, green onions and sun dried tomatoes.
• In another small bowl whisk together olive oil, fresh lemon juice, oregano, mint, salt and black pepper to taste.
• Toss salad and dressing well.
• Can be served on top of toasted bread slices.
