Lemon Dill Poached Salmon

Ingredients
One whole side of salmon, Approximately 1 lb
2 tbsp. olive oil
1 c. white wine
Juice of one lemon
2 tsp. dried dill
Salt and pepper, to taste
1 lemon cut into round, thin slices
Directions
Place salmon filet skin side down in a lasagna pan. Drizzle over the top: olive oil, white wine, and lemon juice. Then sprinkle dill, salt and pepper over the fish. Line the lemon slices on top of the fish, end to end. Wrap the casserole with foil, and bake at 300 degrees Fahrenheit for 20 minutes (until fish is firm and cooked through). Excellent served with diced red onion and capers.
