Lemon, Cucumber and Garlic Chilled Soup

Ingredients
1 tbsp. olive oil
1 small onion, small diced
2 cloves garlic, minced
1 cucumber, peeled and small diced
2 c. plain yogurt
1 c. chicken or vegetable stock
Zest and Juice of one lemon
Salt and pepper to taste
Directions
In a sauté pan, heat the oil and sauté the onion and garlic until slightly browned. Add the cucumbers and sauté an additional 2 to 3 minutes, so the cucumbers are softer but still maintain their form. Cool this mixture. Add plain yogurt, stock, lemon juice and fine zest, and then salt and pepper to taste. Refrigerate for one hour prior to service to allow the flavors to marry.
