Lemon Coconut Ice

Ingredients
1 banana
Zest from 1 lemon, remainder cut in slices for garnish
1 can coconut milk
4 c. ice
1 tsp. ground cardamom
2 tsp. honey
½ c. plain yogurt (or vanilla)
¼ c. toasted, sweetened coconut shavings
Directions
Place the banana, lemon zest, coconut milk, ice, cardamom, honey and yogurt and blend them in a blender until smooth. In a skillet, turn on the heat and add coconut shavings. Stir frequently until toasted brown. Pour the coconut lemon mixture into cups and sprinkle with the coconut shavings and garnish with a slice of lemon on the side of the glass.
