Lemon Cauliflower

Ingredients
zest from 1 Paramount Citrus lemon
juice from 1 Paramount Citrus lemon
4 cups cauliflower florets
2 tablespoons butter
3 garlic cloves, pressed
1 bunch of green onions, chopped
2 teaspoons sweet paprika
1/2 cup fresh parsley, chopped
1/2 cup feta or Parmesan cheese, grated
Directions
• Preheat oven to 375°F.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice the lemon with a citrus reamer or juicer; set aside.
• In a large pot, add lemon zest to water.
• Place cauliflower pieces into pot and bring to a boil; cook until crisp and tender.
• Reserving 1/2 cup of cooking liquid, drain and set aside.
• Melt butter in a large skillet; sauté garlic and green onions until fragrant, being careful not to burn the garlic.
• Add fresh lemon juice and the reserved cooking liquid and cook over medium-high heat for 2–3 minutes.
• Add paprika, parsley and cauliflower; mix well.
• Transfer sauté to an ovenproof dish.
• Sprinkle cheese on top and bake for 10–15 minutes.
