Lemon Broccoli With Yogurt VegetarianQuickHealthy

Ingredients

Juice from 2 Paramount Citrus lemons
½ lb. broccoli, trimmed and cut into small fork size pieces, cooked and drained
3 tablespoons extra virgin olive oil
Salt and pepper to taste
1 cup plain yogurt
1 tablespoon extra virgin olive oil
1 teaspoon crushed red pepper
1 teaspoon dried mint

Directions

• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large bowl mix broccoli with olive oil, lemon juice, salt and pepper to taste.
• Add yogurt and toss well.
• Transfer broccoli to a flat serving plate.
• In a small pan heat crushed red pepper and dried mint with 1 tablespoon olive oil for 1-2 minutes over medium-high heat.
• Pour sauce over broccoli and serve.
• Can be served warm or cold.
