Lemon, Broccoli and Potato Soup

Ingredients
juice from 4 Paramount Citrus lemons
1 tablespoon olive oil
1 onion, diced
1 medium carrot, diced
1 medium potato, diced
1/2 lb. broccoli, trimmed and cut into small fork size pieces
1-1/2 cups chicken or vegetable broth
1 teaspoon dried thyme, crumbled
salt and pepper to taste
Directions
• Juice four lemons with a citrus reamer or juicer; set aside.
• In a medium pot, sauté onion, carrot and potato with olive oil.
• Add broccoli and sauté for an extra 1–2 minutes.
• Add broth, fresh lemon juice and dried thyme; stir well.
• Bring soup to a boil.
• Reduce heat to low and cook for 30 minutes.
• If you like, blend the soup with a hand blender.
• Sprinkle with salt and pepper to taste.
• Serve hot.
