Lemon and White Chocolate Muffins

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 3 Paramount Citrus lemons
2 cups flour
¾ cup sugar
1 tablespoon baking powder
1 teaspoon vanilla extract
2 eggs, beaten
½ cup butter, melted
½ cup white chocolate chips, chopped
Directions
• Preheat oven to 400°F.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice 3 lemons with a citrus reamer or juicer; set aside.
• Lightly grease muffin cups.
• In a large bowl, mix together flour, sugar, baking powder, vanilla extract and lemon zest.
• In another medium bowl, whisk together fresh lemon juice, eggs and melted butter.
• Slowly add the liquid mixture to the flour mixture.
• Add chocolate chips and stir.
• Fill muffin cups about 2/3 full.
• Bake for 15-20 minutes until lightly browned.
• Let muffins cool for 5 minutes.
• Remove muffins and dust with powdered sugar if desired.
