Lemon and Sundried Tomato Dip

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from1 Paramount Citrus lemon
1 cup oil-packed sun-dried tomatoes, drained and coarsely chopped
8 ounces Ricotta cheese
1 cup low fat plain yogurt
1 clove garlic, minced
2 tablespoons fresh basil, chopped
Salt and pepper to taste
½ teaspoon cayenne pepper (optional)
Fresh vegetables to dip
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Combine all ingredients in a food processor and puree until smooth.
• Serve the dipping sauce with fresh vegetables.
