Lemon And Herb Marinated Green Olives

Ingredients
Juice from 2 Paramount Citrus lemons
1 Paramount Citrus lemon, cut into wedges
½ lb. cracked green olives
4 cloves garlic, peeled and halved
3 tablespoons extra virgin olive oil
1 tablespoon coriander seeds
2 sprigs fresh thyme or ½ teaspoon dried thyme
1 sprig fresh rosemary or ¼ teaspoon dried rosemary
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• Cut a lemon into wedges; set aside.
• In a large bowl, combine all ingredients together and mix using your hand.
• Place in a glass jar with a lid.
• Close lid and leave overnight at room temperature, then store in the refrigerator.
• Can be stored up to 1 month.
• Bring to room temperature before serving.
