Lemon and Blueberry Pancakes VegetarianQuick

Ingredients

Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
1 cup all-purpose flour
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda
½ teaspoon salt
1 tablespoon brown sugar
1 egg, beaten
¾ cup milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
¾ cup fresh or frozen blueberries

Directions

• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a large bowl, combine first 6 ingredients.
• In another bowl, mix lemon juice, egg, milk, butter and the vanilla extract.
• Add two mixtures and whisk until a nice batter forms.
• Add blueberries and stir gently.
• Lightly grease a large skillet.
• Pour ¼ cup of batter for each pancake.
• Cook each side turning once until golden brown and serve hot.
