Italian Sausage Soup with Lemon Garlic Sauce

Ingredients
1 lb. sweet Italian sausages, sliced into chunks
2 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 lb. fresh or canned tomatoes, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
2 teaspoons red pepper flakes
4 cups beef or chicken broth
1 cup spinach, chopped coarsely
GARLIC-LEMON SAUCE
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
2 garlic cloves, minced
3 tablespoons fresh parsley, chopped
2 tablespoons extra virgin olive oil
Directions
• In a large skillet, heat 1 tablespoon olive oil and cook sausages until browned.
• Transfer the sausages to a plate; add 1 tablespoon olive oil to the same skillet and sauté onions until softened.
• Add tomatoes, basil, oregano and red pepper flakes. Cook for a few minutes until tomatoes are softened.
• Add stock, sausage and spinach leaves. Bring to a boil.
• Reduce heat and simmer for 10-15 minutes.
GARLIC-LEMON SAUCE
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a small saucepan, heat olive oil, combine all ingredients except parsley
• Cook for 3-5 minutes add parsley.
• Ladle into bowls, season with lemon-garlic sauce and serve.
