Ingredients

juice from 1 Paramount Citrus lemon
4 Roma tomatoes, diced
2 small cucumbers, diced
1 red pepper, diced
1 small onion, chopped
1/4 cup fresh parsley, chopped
2 tablespoons extra virgin olive oil
salt and pepper to taste

Directions

• Juice a lemon with a citrus reamer or juicer; set aside.
• In a medium salad bowl, mix all vegetables together.
• Pour olive oil and fresh lemon juice over salad and toss well.
• Season with salt and pepper to taste and serve.
