Homemade Limoncello

Ingredients
10 Paramount Citrus lemons
1 bottle (750 ml) vodka
3 cups water
2 cups sugar
Directions
STEP 1
• Wash lemons well and pat dry.
• Peel the lemons carefully, using a vegetable peeler or a zester. Do not leave any pith on the peels. Keep the lemons for another use.
• Place the lemon peels in a 2 quart large glass jar and pour the vodka over the lemon peels.
• Cover the jar and let sit at room temperature at least for 10 days.
STEP 2
• In a large saucepan, combine water and sugar and cook over medium heat until sugar dissolves.
• Let the syrup cool completely and pour over the vodka.
• Cover and let stand at room temperature for an extra 10 days.
STEP 3
• Strain the limoncello through a mesh strainer, discard the lemon peels.
• Pour into bottles and keep refrigerated until ready to serve.
