Habanero Citrus Splash Chef

Serves: 2 1/2 Cups

Ingredients

1 1/2 tsp. kosher salt
1 1/2 tsp. sugar
1/8 tsp. xanthan gum
1 each habanero chile, smoked or charred, stem and seeds removed
6 Cuties Clementines or Mandarins (about 10 oz. peeled wt.)
[substitute peeled oranges by wt. if Clementines or Mandarins are out of season)
1/2 cup fresh-squeezed Paramount Citrus lime juice

Directions

In a small bowl combine the salt, sugar and xanthan gum. Set aside.

Place remaining ingredients in a blender. Blend on high for 30 seconds. Sprinkle in the dry mix and immediately blend again on high for about 1 minute, until smooth. Cover and refrigerate for up to 3 days. Stir before using.
