Grilled Clementine Salmon

Ingredients
50 clementines
100 – 4 to 6 oz. portions salmon (size determined by what ones restaurant specs require)
Salt and pepper
Sheet trays to hold salmon
Canola cooking spray
Directions
*Supreme segment the clementines. Set aside. Salt and pepper all salmon. Spray with cooking spray and diamond grill mark one side. Place the grill marked side up salmon on sheet trays. Finish to desired temperature in a 375 degree Fahrenheit convection oven (approximately five minutes to medium).
