Green Lentil Salad with Lemon Yogurt Dressing

Ingredients
Juice from 2 Paramount Citrus lemons
1 cup green lentils
½ cup rice
1 medium yellow onion, chopped
1 carrot, diced
3-4 green onions, chopped
2 tablespoons fresh dill, chopped
¼ cup fresh mint, chopped (optional)
1 teaspoon sumac powder
4 tablespoons extra virgin olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne pepper (optional)
LEMON-YOGURT DREESING
Juice from 1 Paramount Citrus lemon
1 cup low-fat plain yogurt
1 tablespoon dried mint
½ teaspoon cumin powder
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a medium sauce pan, place lentils covered with water and bring to a boil and remove from heat
• In another sauce pan, combine rice and 1 cup water and bring to a boil
• Drain the lentils and mix with rice in a salad bowl
• Gently stir with a fork to combine
• In a large skillet, heat olive oil and sauté yellow onion until just soft
• Add carrot and sauté for 2 minutes, then add this to the lentil-rice mixture
• Add green onions, fresh dill, mint and mix
• Season with sumac, salt and pepper
• Add the fresh lemon juice and mix well
LEMON-YOGURT DRESSING
• Juice a lemon with a citrus reamer or juicer; set aside.
• To make the lemon-yogurt dressing, combine all dressing ingredients, season with salt and pepper to taste and serve with the salad
