Green Beans with Citrus-Basil Gremolata Vegetarian

Ingredients

Zest of 1 orange
Zest of ½ lemon
Juice of ½ orange
Juice of 1 lemon
1 lb. green beans, trimmed, cooked and drained
2 shallots, diced
2 clove garlic, minced
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
3 tablespoons olive oil
½ cup chicken or vegetable broth

Directions

• Zest half of an orange using a zester or a fine grater; set aside.
• Zest half of a lemon using a zester or a fine grater; set aside.
• Juice half of an orange with a citrus reamer or juicer; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• To make the gremolata, in a small bowl, mix garlic, basil, parsley, orange and lemon zest and set aside.
• In a large heavy skillet sauté onion with olive oil over medium-high heat.
• Add gremolata mixture and stir for 30 seconds.
• Add broth, fresh orange and lemon juices and bring to a simmer.
• Add green beans and toss well.
• Cook until green beans are heated through.
• Sprinkle with salt and pepper to taste.
