Goat Cheese, Almond, And Blood Orange Flan

Ingredients
1 c. whole milk
1 pint heavy cream
3 blood oranges, juice and zest
1 tbsp. honey
1 tsp. salt
7 eggs, separated
1 tbsp. powdered sugar
ΒΌ c. goat cheese
1/3 c. almonds, crushed fine
Directions
In a two-quart saucepan add milk, heavy cream, orange zest, honey, and salt. Heat on low. Separate the eggs into separate bowls, one with whites, the other yolks. Whip the eggs into soft peaks. In a mixer add the powdered sugar, egg yolks, and then slowly drizzle in the hot milk and cream. Fold in the egg whites. Place goat cheese and almonds in greased ramekins. Pour the egg mixture over the almonds and goat cheese and bake in a water bath at 325 degrees Fahrenheit until firm.
