Ginger Carrot And Orange Tofu Salad

Ingredients
1 package baked tofu cutlets
¼ c. rice wine vinegar
¼ c. soy sauce
¼ c. sesame oil
1 tbsp. honey
1 clove garlic, crushed
½” peeled ginger, minced
2 oranges cut into *supreme segments
3 thinly sliced green onions
3 carrots, peeled and grated
4 c. mixed greens

Directions
Cut the tofu into small cubes and place in a mixing bowl. Add all other ingredients. Let marinate for and hour or more. Serve on a bed of 2 c. mixed greens per serving.
