Garbanzo Bean Salad with Lemon Dressing

Ingredients
Juice from 2 Paramount Citrus lemons
1 can (1 lb.) garbanzo beans, rinsed and drained
1 red onion, sliced fine
5 green onion sprigs, sliced
2 Roma tomatoes, diced
½ English cucumber, diced
1 red pepper, chopped
1 green pepper, chopped
¼ cup extra virgin olive oil
1 garlic clove, crushed
2 tablespoons fresh mint, chopped
Salt and black pepper to taste
Directions
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large bowl mix together garbanzo beans, red onion, green onions, tomato, cucumber, red and green pepper.
• In another small bowl whisk together olive oil, fresh lemon juice, minced garlic, fresh parsley, fresh mint and salt and pepper to taste.
• Toss salad with the lemon dressing and serve.
