Fresh Orange Filled Pancake Puffs

Ingredients
zest from 1 Paramount Citrus orange
3 Paramount Citrus oranges, supremed* and cut into cubes
4 oz. graham crackers crumbs
3/4 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
3 tablespoons granulated sugar
3 eggs
1-3/4 cups buttermilk
5 tablespoons butter, melted
syrup for serving

Directions
• Zest an orange using a zester or a fine grater; set aside.
• Supreme three oranges.* Cube segments and set aside.
• Blend the graham crackers in a blender on high speed, until ground.
• Add flour, baking powder, baking soda, sugar and orange zest; pulse to combine.
• In a large bowl, whisk egg yolks with buttermilk; whisk into the flour mixture.
• In a medium bowl, use an electric mixer on high speed to beat egg whites for about 1–2 minutes until stiff.
• Gradually add egg whites to the batter and stir to combine.
• Place ½ teaspoon of melted butter in each cup of a filled-pancake pan.
• Pour 2 teaspoons of the batter in each cup. Place an orange cube in the center of each and pour an extra teaspoon of the batter on top of oranges to cover.
• Cook for about 3–5 minutes and flip pancakes over.
• Cook the other side for about 3 minutes.
• Transfer pancake puffs to a serving dish.
• Serve warm with your favorite syrup.
