Fresh Orange and Walnut Muffins

Ingredients
Zest from ½ Paramount Citrus orange
Juice from 2 Paramount Citrus oranges
1 small Paramount Citrus orange, *supreme segmented and cut into cubes
1 ¾ cups flour
½ cup sugar
¼ cup brown sugar
1 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 egg
6 tablespoons butter, melted
4 tablespoons walnuts or pecans, chopped

Directions
• Preheat oven to 400°F
• Zest half of an orange using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• *Supreme segment an orange. Cube segments and set aside
• Lightly grease muffin cups.
• In a large bowl, mix together flour, white and brown sugar, baking powder, baking soda, vanilla extract and orange zest.
• Stir in fresh orange juice, egg and butter.
• Add chopped fresh orange and walnuts to the mixture.
• Stir well to combine.
• Fill muffin cups about 2/3 full.
• Bake for 20-25 minutes until lightly browned.
• Let muffins cool for 5 minutes.
• Remove muffins and dust warm muffins with powdered sugar if desired.
