Fisherman's Stuffed Lemons

Ingredients
Zest from 1 Paramount Citrus lemon
6 Paramount Citrus lemons, cut into halves
6 your choice of lettuce leaves
1 cup canned tuna
2 hard boiled eggs, chopped
3 tablespoons mayonnaise
1 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Salt to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Halve six lemons and take out the pulp of lemon halves.
• Cut the bottoms to balance the lemon cups to stand and place each empty lemon cup on a lettuce leave.
• In a medium bowl, with a fork mix together tuna, fresh lemon juice, eggs, mayonnaise, black pepper and salt to taste.
• Stuff each lemon cup with the filling.
• Sprinkle fresh parsley and serve.
