Fennel and Radish Salad with Creamy Lemon Dressing

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
1 apple, peeled, cored and diced
1 stalk fennel, sliced
½ lb. red radishes, sliced
Salt and pepper to taste
4 tablespoons yogurt
2 tablespoons cream cheese
1 teaspoon sugar
1 clove garlic, crushed
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a medium bowl, whisk together cream cheese, yogurt, lemon juice, lemon zest, sugar and garlic.
• In a salad bowl, combine apple, fennel and radishes.
• Season with salt and pepper to taste.
• Toss with the lemon dressing and serve.
