Curried Potato with Lemon

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
3 tablespoons olive oil
1 small onion, chopped
2 garlic cloves, minced
1 chili pepper, deseeded and chopped fine
1 tablespoon curry powder
1 tablespoon tomato paste
1 lb. potatoes cut into medium cubes and parboiled
¼ cup fresh cilantro, chopped
Salt to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large skillet heat olive oil and sauté onion and garlic until soft.
• Add chili pepper, curry powder, tomato paste, lemon juice and zest and cook for 2-3 minutes.
• Add potatoes, cover and cook for about 10 minutes until potatoes are tender.
• Top with cilantro and season with salt.
