Crispy Lemon Mozarella Triangles

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
1 lb. mozzarella cheese, cut into triangle shapes
2 eggs, beaten
1 cup fresh bread crumbs
1 teaspoon black pepper
2 cloves garlic, minced
3 tablespoons fresh parsley, chopped very fine
1 cup flour
Oil for frying
Salt to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a small bowl mix eggs with fresh lemon juice.
• In another bowl mix fresh bread crumbs, black pepper, garlic and fresh parsley.
• Put the flour in a plate.
• In a large frying pan, heat oil to for frying.
• Coat cheese triangles first in flour, then egg mixture and then bread crumbs.
• Fry each side until crispy and golden brown.
• Remove and let rest on paper towels to remove excess oil.
• Remove paper towels from the plate and serve immediately.
