Creamy Citrus Spinach VegetarianQuick

Ingredients

Zest from 1 Paramount Citrus orange
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
1 tablespoon olive oil
1 medium shallot, minced
1 clove garlic, minced
2 tablespoons pine nuts
10 cups spinach, frozen or fresh (if fresh, washed and roughly chopped)
½ cup heavy cream
Salt and pepper to taste

Directions

• Zest an orange using a zester or a fine grater; set aside.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a large skillet heat olive oil and sauté shallot, garlic and pine nuts for a few minutes.
• Add spinach and stir well to coat.
• Add cream, orange zest, lemon zest and lemon juice.
• Season with salt and pepper.
• Cook for 3-5 minutes over medium-high heat until most of the liquid of the spinach has evaporated and serve.
