Crab And Citrus Frittata

Ingredients
2 tbsp. olive oil
2 cloves garlic
1 green pepper, small diced
1 small onion, small diced
2 shallots, peeled and small diced
1 tbsp. coarsely chopped cilantro
3 oranges, *supreme segments
2 c. crabmeat
Salt and pepper to taste
Zest of one orange
6 eggs, lightly beaten
¼ c. Parmesan
¼ c. bread crumbs

Directions
Heat the oil in a cast iron skillet. Add the onion, garlic, green pepper, and shallots. Sauté for a minute, then add the cilantro and oranges. Add crabmeat, salt, and pepper. Add the zest and eggs. Place in a 375-degree Fahrenheit oven and bake until the top starts to puff up and the egg has firmed up, to an internal temperate of 165F (approximately 30 minutes). Sprinkle the parmesan and bread crumbs on top and bake for the last five minutes until slightly brown. Cut into wedges and serve.
