Coconut Clementine Cupcakes

Ingredients
CUPCAKES
zest from 2 Paramount Citrus clementines
juice from 2 Paramount Citrus clementines
1 stick butter
1 cup granulated sugar
2 eggs, beaten until foamy
1-3/4 cups cake flour
2 teaspoons baking powder
1-1/2 teaspoons vanilla extract
1/2 teaspoon salt
TOPPING
Orange Lemon Frosting
coconut flakes
Directions
• Preheat oven to 350°F.
• Zest two clememtines using a zester or a fine grater; set aside.
• Juice the clementines you zested with a citrus reamer or juicer; set aside.
• In a medium bowl, use an electric mixer to cream butter with sugar and clementine zest.
• Gradually add in eggs and whisk together until well blended.
• Add flour, baking powder, vanilla extract and salt.
• Add clementine juice and stir using a spatula until a nice blended batter forms.
• Spoon batter into cupcake liners and bake for 20–25 minutes until a toothpick inserted in the center comes out clean.
• Let cool completely; apply frosting to top of cupcakes and sprinkle with coconut flakes.
