Citrus Spaghetti

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus orange
Zest from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
1 lb. spaghetti
5 tablespoons extra virgin olive oil
3 shallots, sliced fine
2 cloves garlic, minced
1zuchhini, julienned
2 carrots, julienned
1 red pepper, julienned
½ cup fresh parsley, chopped
2 tablespoons basil, chopped
½ cup parmesan cheese, grated
Salt and pepper to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Cook the spaghetti according to instructions.
• Meanwhile, in a large skillet heat olive oil and sauté shallots and garlic for 3-5 minutes until soft.
• Add carrots, zucchini and red pepper strips and sauté for an extra 5 minutes.
• Add fresh orange and lemon juice and zest of fruits.
• Season with salt and pepper to taste and cook until juices are heated through.
• Add spaghetti and toss well.
• Top with fresh parsley and basil and parmesan cheese and serve.
