Citrus Rice Salad

Ingredients
2 cups long grain rice, cooked
½ red onion, diced
4 sprigs green onions, sliced
10 cherry tomatoes, quartered
1 English cucumber, diced
½ yellow onion, diced
¼ cup fresh cilantro, chopped
DRESSING
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
Juice from 2 Paramount Citrus oranges
¼ cup extra virgin olive oil
2 cloves garlic, minced
Salt and pepper to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a large bowl combine cooked rice, onion, green onions, tomato halves, cucumber, yellow pepper and chopped cilantro.
• In a small bowl whisk together fresh orange juice, lemon juice, lemon zest, olive oil, garlic, salt and pepper to taste.
• Mix well and pour over the rice salad.
• Toss gently and serve.
