Citrus Marinated Vegetable Kabobs

Ingredients
Juice from 2 Paramount Citrus oranges
Juice from 2 Paramount Citrus lemons
1 onion, quartered
1 potato, cut into small chunks
1 green pepper, cut into chunks
1 red bell pepper, cut into chunks
1 yellow sweet pepper, cut into chunks
8 medium button mushrooms
1 zucchini, cut into chunks
8 cherry tomatoes
1 tablespoon soy sauce
½ cup extra virgin olive oil
3 cloves garlic, minced
Salt and pepper to taste
Directions
• Juice two oranges with a citrus reamer or juicer; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large baking dish, whisk together fresh orange juice, lemon juice, soy sauce, olive oil, garlic, salt and pepper to taste.
• Place all vegetables in sauce.
• Cover and marinate for 1-2 hours.
• Thread all vegetables on skewers alternately, saving the potatoes for the end.
• Grill over medium heat for 8-10 minutes or until tender, turning frequently.

• Bake uncovered at preheated 375 F until vegetables are crisp-tender.
