Citrus Marinated Spicy Ribs

Ingredients
MARINADE
Zest from 1 Paramount Citrus lemon
Juice from 3 Paramount Citrus lemons
Juice from 3 Paramount Citrus oranges
¼ cup water
2 tablespoons salt
1 teaspoon dried oregano
1 teaspoon dried thyme
1 tablespoon crushed red pepper flakes
3 lbs. back ribs
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice three lemons with a citrus reamer or juicer; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• In a big bowl, whisk together all marinade ingredients.
• Place ribs into the sauce, cover and refrigerate for 3-6 hours.
• Preheat oven to 300°F.
• Transfer ribs to an oven safe dish, reserving the remaining marinade.
• Roast until the meat is very tender for 2 ½ -3 hours turning the meat twice an hour and basting with the remaining sauce each time.
• Transfer ribs to a serving plate and let stand for 10 minutes before serving.
