Citrus Mahi Mahi Steaks

Ingredients
Juice from 1 Paramount Citrus blood orange
Juice from 1 Paramount Citrus lemon
2 Paramount Citrus blood oranges, sliced fine (or oranges)
4 mahi mahi fillets, 6-8 oz. each
2 tablespoons olive oil
2 cloves garlic, minced
Salt and fresh ground black pepper to taste
2 tablespoons fresh basil, chopped
2 tablespoons fresh chives, chopped
Directions
• Juice a blood orange with a citrus reamer or juicer; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Slice 2 blood oranges; set aside.
• In a large bowl, whisk together fresh orange juice, lemon juice, olive oil, garlic, salt and black pepper. Add fish, cover and refrigerate and allow to marinate at least 1 hour.
• Preheat oven to 375°F.
• Place fish fillets on a lightly greased baking dish and top each fillet with blood orange slices.
• Bake at 375°F for about 25-30 minutes or grill to desired temperature, flipping only once.
• Serve covered with the orange slices and sprinkle with fresh basil and chives.
