Citrus London Broil Chef

Ingredients

20 lbs. flank steak
1 qt. ½ vegetable oil, ½ olive oil
2 oz. lemon juice
2 oz. orange juice
4 tsp. salt
4 tsp. black pepper
2 tsp. thyme

Directions

Place all ingredients in a hotel pan. Marinate for an hour, then flip steaks over and marinate another hour. Grill on both sides to a medium rare. Slice on the bias, against the grain. Serve with Orange and Sweet Potato Dauphinois.
