Citrus Grilled Shrimp QuickChef

Serves: 1 lb.

Ingredients

Shrimp
1 tsp. kosher salt
2 tsp. ground coriander
1/2 tsp. ground chipotle chili powder
1 pound shrimp (21/25) peeled, deveined, tail off – drained well

Dressing
6 Tbsp. fresh-squeezed Paramount Citrus lime juice
1 1/2 tsp. ground coriander
1/2 tsp. kosher salt
1 tsp. minced garlic
1/4 cup small-diced red onion
1/4 cup small-diced red bell pepper
2 Tbsp. chopped cilantro
1 tsp. minced lime zest

Directions

To prepare the shrimp: Combine the salt, coriander and chili powder and set aside. In a large bowl toss the shrimp with the seasoning blend to coat well. Cover and refrigerate for 15 minutes.

Preheat grill to high. When shrimp have marinated in the seasoning, then grill until just cooked. Cool.

To make the dressing and finish shrimp: In a large bowl combine the dressing ingredients. When shrimp are cool, slice them in half lengthwise, then give them a light chop. Add shrimp to dressing and toss to coat. Refrigerate until ready to serve. Do not toss more than 2 hours ahead of time.
