Citrus Ginger Chicken Healthy

Ingredients

Juice from 1 Paramount Citrus lemon
Juice from 3 Paramount Citrus oranges
2 Paramount Citrus oranges, *supreme segmented
2 lbs. chicken thighs
Fresh ground black pepper
2 tablespoons olive oil
3 garlic cloves, minced
4 tablespoons ginger, peeled and grated
1 teaspoon cumin
1 tablespoon Dijon mustard
Kosher salt to taste

Directions

• Juice a lemon with a citrus reamer or juicer; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• *Supreme segment two oranges. Cube segments and set aside
• Season chicken with freshly grounded black pepper and kosher salt.
• In a large skillet, heat olive oil and place cook chicken over low heat until crisp and tender.
• Meanwhile, in a saucepan add all other remaining ingredients one by one and stir to combine.
• Add chicken and simmer for about 15-20 minutes until chicken is blended with sauce.
