Citrus Fajitas

Ingredients
1 lb. fajita beef
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
MARINADE
Zest from ½ Paramount Citrus orange
Juice from 1 Paramount Citrus oranges
Juice from 2 Paramount Citrus lemons
4 garlic cloves, minced
4 tablespoons olive oil
½ teaspoon black pepper
½ teaspoon jalapeno, deseeded and chopped
¼ teaspoon brown sugar
Directions
• Zest half of an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a medium bowl, whisk together all marinade ingredients.
• Add meat to the marinade, toss and refrigerate, covered for 3-5 hours.
• Drain the marinated steak strips and grill on a grill or a grilling pan over medium-high heat and cook for 3-5 minutes on each side.
• Remove the beef from the pan and let rest.
• Meanwhile, add the bell peppers and onions to the lightly re-greased pan and grill the vegetables for about 5-8 minutes until barely limp.
• Serve fajitas immediately on warm tortillas with the vegetable sauté and your choice of sour cream, salsa, lettuce, and guacamole.
