Citrus Crab Cakes

Ingredients

Juice from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus lemon
1 Paramount Citrus orange supreme segmented* and cut into cubes
1 lb. Dungeness crab meat
1 cup fresh bread crumbs
½ cup half and half cream
1 egg, beaten
1 bunch green onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 celery sticks, chopped
4 tablespoons extra virgin olive oil
Chili powder to taste
Salt and pepper to taste
Flour to dust
2 tablespoons butter

Directions

• Juice three oranges with a citrus reamer or juicer; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• *Supreme segment an orange. Cube segments and set aside.
• In a large bowl combine all ingredients except flour and butter and mix well.
• Cover and refrigerate overnight.
• Melt butter in a large skillet.
• Drop spoonful of cake mixture into the skillet.
• Fry crab cakes on both sides around 10 minutes until each side is golden brown.
