Citrus Beef and Cabbage Stir-Fry

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus orange
1 lb. top sirloin, thinly sliced
Salt and pepper to season beef
4 tablespoons cornstarch
2 tablespoons vegetable oil
1 teaspoon peanut oil
2 cloves garlic, minced
2 tablespoons ginger, grated
1 carrot, julienned
1 medium cabbage, chopped
1 tablespoon sugar
1 tablespoon soy sauce
1 tablespoon rice vinegar
½ teaspoon salt
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• Season beef with salt and pepper.
• Dip beef slices in cornstarch.
• In a large wok, heat vegetable oil and stir fry beef slices for 1 minute until just browned and transfer to a bowl.
• Wipe the wok and add 1 tablespoon oil and peanut oil, heat until fragrant.
• Add garlic, ginger, carrot and cabbage and sauté until soft.
• Add sugar, soy sauce, vinegar, fresh orange juice, orange zest and salt.
• Cook for about 4-5 minutes.
• Add beef strips and cook for an extra 2-5 minutes until heated through and serve.
